      <image:title>Articles - Early Lighting - During the holiday season we pass by many homes, either old or new, and the proverbial single electric candle illuminates the window. Do we know the colonial meaning of this practice? Do we even really know the background of the candle and its purpose for our forebearers? Let’s start with the basic fact that much to our amazement, the average household, be it Chester County or anywhere in the 18 th Century, had maybe two whole candles to burn per week. What you say, “Is that all?” Here is some background into this odd fact. Let’s start with the candle itself which was hand made and a time consuming project. The most time consuming task involved tying a cut piece of wick onto a dowel or stick and dipping it into a vat of molten wax. This took a deep pot and a lot of time and wax to make a candle of some length. Or, one could have used a candle mold which was made of tin and came in various sizes. This was a similar procedure as a wick was secured to a stick or dowel and positioned over the hole in the candle mold. One had to initially dip the wicked rod into the molten wax to make the string wick straight and center it over each hole in the mold.</image:title>

      <image:title>Articles - Fact, Fiction or a Bit of Both - Every legend hinges on a thin thread of truth, even if, as time passes, it is impossible to discern what that truth is. That is the case of a long-ago Marshallton resident, Nathaniel “Nathan” L. Simms, and his connection or lack thereof to events surrounding the assassination of President Abraham Lincoln. Depending on which account you read, Simms, a freed slave (or was he born free?) is purported to have held John Wilkes Booth’s horse at Mary Surratt’s hotel in Maryland after Lincoln’s assassination. Or some reports claim he held Booth’s horse at Ford’s Theater in Washington, DC? See what I mean? Accounts of Simms’ actions after President Lincoln’s assassination of April 14, 1865, are riddles wrapped in a mystery inside an enigma, with one report stating one thing and another stating something else. However, for an event that many questioned even happened, there are certainly plenty of accounts and reports of it from sources</image:title>

According to a January 19, 1934 Philadelphia Ledger article and an article in the Coatesville Record the same day, Simms “died this week and was buried yesterday… He was buried in potter’s field of the Chester County Home for the Poor at Embreeville”, which became the Embreeville State Hospital. However, a Daily Local News article that same day in 1934, and an Oxford Press article Jan. 25, states Simms was buried in Bradford Cemetery in Marshallton. (That potter’s field, according to Asylum Projects (http://www.asylumprojects.org, keyword Embreeville State Hospital), is now part of the Cheslen Preserve outside the now-closed Embreeville State Hospital grounds. They all contributed to the foundation and development of Marshallton’s history, architecture, and current everyday life. When Edward Clayton, Thomas Arnold, and George Martin received their Penn land grants in 1713-1716, they found that they had been awarded an area of very fertile land in a strategic location now known as “Between the Brandywines.” They quickly began their settlement in the region aided in the early years by the farming and hunting information that the Delaware, the original inhabitants of the Marshallton area, shared with the European settlers.</image:title>

We have the magnificent $90 million restoration of the fountains at Longwood Gardens, which have reopened this past late spring /early summer to raves of grandeur. You can see the shrubbery and the fountain apparatus when you attend the Preview Party of the Chester County Day Tour on October 6th at Longwood, but the main fountains will not be displayed after the Preview Lectures. The other fountain which is being celebrated this year, and in conjunction with Chester County Day, is the fountain at Marshall Square Park. The fountain there has been returned to its original position in the park after being gone about 65 years.</image:caption>

      <image:title>Articles - More Than a Public Park - Zoo, arboretum, plant nursery, reservoir, concert venue, public rallying place! Hard to believe all this was once packed into 5.5 acres on the highest point of ground in West Chester. Marshall Square Park has a rich history that includes Revolutionary War heroes, Civil War soldiers, philanthropists, a 1901 controversy that would make present-day environmentalists blanch, local drunks, young lovers, and nature enthusiasts.</image:title>

      <image:title>Articles - More Than a Public Park - Despite this meddling, the park survived and by 1909 an arc electric light system illuminated new plants, trees and flowers, its zoo and 65 bright red benches and summer seats. Eventually, a playground, basketball and volleyball courts were added to the park. In 2001, the Friends of Marshall Square Park formed to support and restore the park to its early glory. They have renovated the Swiss cottage and restored the elaborate 5-tier fountain at the northeast corner. This fountain, first installed in 1889 with a ball mechanism that caused alternating patterns of water spray, was removed from the park around the 1950s, stored in the borough maintenance yard and then disappeared. Years later it resurfaced as a sculptural piece on a farm in Westtown Township; then was purchased by a homeowner for his estate just outside West Chester. The fountain was displayed on his property for several years, but after he sold the house, new owners dismantled and stored it behind a barn. Learning of this, the park organization offered to take it off the owners’ hands, recovering 3 of the fountain’s 5 bowls. A fourth had to be reconstructed because no one knows what happened to it. The fifth bowl, which is 8 feet across had been buried at the site of the original fountain, as was the pool that surrounded the fountain. So once again, the newly restored, lighted fountain dances “merrily in that shady retreat,” as it was described in a 1932 article in the Daily Local News.</image:title>

      <image:caption>3 pounds Braeburn or Jonagold apples, cored, peeled, and sliced into ¼ inch slices ¾ cup REAL maple syrup ¾ cup dried, sweetened cranberries 2 tablespoons fresh orange juice 2 tablespoons unsalted butter cut into cubes 1 tablespoon coarse raw sugar for crust Pre-heat oven to 350 and position racks in bottom half of oven. Mix apples, cranberries, syrup, and orange juice in deep round casserole dish. Place cubed butter on the surface of the mixture. Place a crust on top and turn edges under around rim of the baking dish and make slits for steam to escape. Bake for about 35 minutes or until crust is dry. At that point turn heat to 400 and sprinkle the coarse raw sugar on top of the crust and continue to bake at 400 for another 35 to 40 minutes. Apples should be tender, juices thickly bubbling and crust golden colored. There is nothing better than to serve this with a fresh scoop of vanilla ice cream and a cup of coffee.</image:caption>

      <image:caption>¼ cup unsalted butter 2 pounds of scrubbed carrots, sliced. 1 pound of scrubbed parsnips, sliced. 2 large, sweet onions chopped. 4 to 5 cups chicken stock or broth 1 cup of light cream or half and half. (Can use fat free) 2 tablespoons fresh, peeled and finely chopped ginger. 1 teaspoon grated fresh lemon peel. 1 teaspoon grated fresh orange peel. ½ cup fresh chopped flat Italian parsley ½ teaspoon ground turmeric In a large, heavy soup pot melt the butter over medium heat.  When melted, add the carrots, parsnips, and the onions and sauté until the vegetables are softened and the onions become translucent. This should take 15 or 20 minutes depending on how finely you slice your carrots and parsnips. Stir into the mixture the ginger, the turmeric, and the lemon and orange peel.  Add half of the stock/broth, reduce the heat to medium and cover and let the soup simmer for 30 minutes or so to blend the flavors.  At this point use an immersion blender to puree in the pot or use a blender to puree in small batches.  Return to the heat and stir in the rest of the stock/ broth and add the cream/ half and half. Taste for salt and pepper.  If served immediately, garnish the top of the serving bowls with. Enjoy!</image:caption>

      <image:caption>Crust: 4 tablespoons unsalted butter, melted 10 phyllo sheets, thawed Filling: 1 tablespoon extra virgin olive oil 1 cup leeks, white and light green parts ½ cup chopped red bell pepper 2 cups fresh baby spinach 4 large eggs 2 large egg whites ¾ cups milk ¼ cup plain non-fat Greek yogurt ¼ teaspoon kosher salt ¼ teaspoon black pepper 1 cup (4 ounces) crumbled feta cheese Directions: To make the crust: Melt butter in a small saucepan or microwave-safe bowl. Brush a 9-inch pie plate or straight-sided skillet with melted butter. Unroll the phyllo sheets in a stack, trim as needed. Place one sheet of phyllo in the pie plate and brush with more butter. Continue layering the phyllo sheets so they form overlapping circles, brushing each layer with more butter as you go. To make the filling: Preheat the oven to 350°. Heat the olive oil in a large skillet over medium-high heat. Add the leeks and the bell pepper and sauce two minutes. Remove from heat and set aside. In a large bowl, whisk together the eggs, egg whites, milk, yogurt, salt and pepper. Set aside. Transfer the pie plate with the crust to a rimmed baking sheet. Spoon the spinach and leek mixture into the bottom of the crust, then sprinkle the feta over the top. Gently pour in the egg mixture. Bake the quiche on the baking sheet for 45-55 minutes, until the eggs are set in the center and puffed slightly and the phyllo is golden brown. Let the quiche cool on a wire rack for 10 minutes. Slice and serve warm or at room temperature. Enjoy!</image:caption>

      <image:caption>For the Carrot Cake: 1 ¼ cup corn oil 2 cups sugar 2 cups flour 2 teaspoons cinnamon 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 4 eggs 4 cups grated carrots (approximately 1 lb. bag) 1 cup raisins 1 cup chopped pecans Cream Cheese Frosting: 8 oz soft unsalted butter 8 oz soft cream cheese 1 (1 pound) box powdered sugar 1 teaspoon vanilla extract Directions: Preheat the oven to 350°. Spray three 9-inch round cake pans with non-stock cooking spray. In a large bowl, whisk together the corn oil and sugar. Sift together the flour, cinnamon, baking powder, baking soda and salt. Sift half the dry ingredients into the sugar-oil mixture and blend. Alternatively sift in the rest of the dry ingredients while adding the eggs one by one. Combine well. Add the carrots. Pour, dividing between the 3 pans. Sprinkle each layer with the raisins and pecans. Bake for approximately 16 minutes, until cake springs back when touched. Cool pans on rack. To make the Cream Cheese Frosting: Mix all ingredients and spread between layers and on top and sides. Enjoy!</image:caption>

      <image:caption>For the Lemon Filling Part One: 1 prepared box of Dr. Oetker’s Lemon Pie and Dessert Filling 2 egg yolks  1 tbsp. salted butter 1/3 cup cold water 2 cups boiling water For the Lemon Filling Part Two: 8 ounces of cream cheese at room temperature ½ teaspoon Lemon Oil  Zest from 2 fresh lemons – divided 3 tablespoons of confectioners’ sugar Juice from the 2 fresh lemons 1 small container of whipped topping 1 tablespoon of dried lemon peel 2 packages of dried ladyfingers Directions: Make the Lemon Filling from the box according to the directions and set aside to allow to cool for 3 to 5 minutes.  Do not allow to set up and “gel”. While it is cooling, have your workstation set up and ready to whip the cream cheese mixture. Using a hand or stand mixer whip cream cheese with the lemon oil and half of the lemon zest. Add the sugar and incorporate until smooth.  Pour the cooling lemon filling into the cream cheese mixture and with a rubber spatula lightly stir the two fillings together to blend.   In a rectangular serving dish, place a layer of dried lady fingers on the bottom of the dish and brush each one with some of the fresh lemon juice.  Add about 1/3 of the lemon mixture on top of the ladyfingers and spread to cover all.   Add the rest of your lemon zest to the whipped topping in its container and mix in gently.  Then spoon on about 1/3 of the whipped topping over top of the lemon mixture which is covering the ladyfingers brushed with fresh lemon juice.   Add another layer of lemon juice brushed ladyfingers on that followed by another 1/3 of the lemon mixture and a layer of whipped topping.  Put a final layering of all three to finish out each bowl of ingredients.   Top with lemon zest or ladyfinger crumbs.  Cover with plastic wrap and refrigerate for several hours to let the ladyfingers soften.  This can be made a day ahead to really infuse the flavors.</image:caption>

      <image:caption>2 to 3 tablespoons extra virgin olive oil ¾ cup dry pasta cooked al dente as suggested above 1 bunch of green onions chopped- white and greens 1 teaspoon toasted coriander seeds Pinch of garlic powder – not garlic salt 1 teaspoon cinnamon ½ teaspoon sea or kosher salt ½ teaspoon freshly ground black pepper 1 quart unsalted or no salt added chicken or vegetable stock. 2 cans (16 ounce) cans of drained and rinsed black beans 1 can pumpkin puree- not pumpkin pie mixture! Chop up left over store roasted chicken or turkey to add if you want. In a large soup pot over medium high heat, add olive oil and heat until it shines. Add the green onions and cook until wilted, stirring occasionally.  Then add cinnamon, coriander, garlic powder, salt and pepper.  Stir to coat with the hot oil and toast mixture until it become fragrant, a few minutes.  Add your vegetable or chicken stock and bring the pot’s contents to a boil.  Add the black beans and the pumpkin puree and incorporate well and lower heat to a simmer and cover. Add your pasta choice. Check cook time as to pasta.  Ditalini will be twice the time of pastina in cooking.  I would guess 10 to 15 minutes to simmer.  Add your precooked poultry if you are going to include this in the dish. Pull from heat and let sit for a few minutes and then adjust salt and pepper if needed to taste.</image:caption>

      <image:caption>1-pound yellow onions chopped 1-pound red onions chopped 1 cup chopped shallots 2 bunches of fresh scallions -white and green chopped ½ pound of carefully washed and thinly sliced leeks ½ cup unsalted butter 1 ½ cups Italian seasoned breadcrumbs Salt and pepper 1 cup grated and dried Italian cheese of your choice (Romano/ Pecorino/Asiago) 2 pounds of pasta ½ pound thick sliced bacon cut into small pieces (optional) Start with a large heavy iron skillet and go one of two ways on medium high heat.  If you want the bacon, then add just the bacon to the hot pan and start to cook it stirring the pieces so as not to burn it.  If you are not using the bacon, then add the butter to the pan and melt.  If you use the bacon, cook thoroughly, and drain pieces on a paper towel.  Leave the renderings in the pan.  Now you have melted butter or bacon renderings in the hot pan into which you will add the white and red chopped onions.  Stir and cook until just wilted which should be about 15 minutes.   At that point, add the shallots and sliced leeks and do the same thing stirring to wilt but not heavily brown.  This step should be 10 minutes.  When that mixture starts to caramelize, finally add in the scallions and stir until well mixed.  This whole process should take about 25 to 30 minutes on medium high heat.  You want to caramelize the onions not cook them until they get brown and dark in spots.  If you did use the bacon and there appears to be an ample amount of bacon rendering still not absorbed by the onions, drain some of that off too.  If you did not use the bacon and the onions have absorbed most of the butter, then add another tablespoon or two of butter to the warm pan. Begin to cook the pasta until al dente. As the pasta is finishing, add some salt and pepper and a healthy pinch of seasoned Italian Herbs to the seasoned breadcrumbs. Drain the pasta and put into a large sized serving bowl. (Do not rinse your pasta if you are going to use all of it right away.  If you do not use all of it in the dish, then rinse so it can be used for another meal).  Add the onion mixture to the hot pasta and then sprinkle the breadcrumb mixture in with that and final top with the grated cheese.  Stir to incorporate all and serve. Should serve 8 -after that heavy soup first course.</image:caption>

TOPPING 3 large egg whites 2/3 cup of granulated sugar Using a large bowl combine the graham cracker crumbs, the cream, the Nutella, the chocolate and the melted butter from the crust ingredients into a bowl and thoroughly mix.  Press into the pie pan to evenly create a bottom and side crusts.  Chill for at least 30 minutes.  While that is chilling, place the chocolate and the butter from the ganache ingredients into a large bowl.  Place the cream and 3 tablespoons of water and the instant coffee/ espresso into a small saucepan, stir to incorporate and bring to a boil.  Remove from the heat and stir and let sit for 5 to 10 minutes.  Stir into the set aside bowl of chocolate and butter and stir until well mixed and all is melted.  Pour into the chilled crust and return to the refrigerator for an hour or two. Now to the topping.  If you want to make a meringue top, take the egg whites and the sugar and beat on medium speed until light and fluffy. Add sugar in 1/3 cup at a time and beat well between added sugar.  Beat until the whites are stiff and shiny.  Spread over the top of the chilled pie and either using a torch, toast the meringue or place in the oven under the broiler and carefully watch as it gets a golden-brown finish.  OR you could use a pre-made whipped topping or marshmallow fluff as a topping.  With a hot cup of coffee, this will be a winner!!</image:caption>

      <image:caption>1 prepared box of Dr. Oetker’s Lemon Pie and Dessert Filling 2 egg yolks 1 tbsp. salted butter 1/3 cup cold water 2 cups boiling water 8 ounces of cream cheese at room temperature ½ teaspoon Lemon Oil Juice from the 2 fresh lemons Zest from 2 fresh lemons 3 tablespoons of confectioners’ sugar 1 small container of whipped topping 1 tablespoon of dried lemon peel 2 packages of dried ladyfingers Make the Lemon Filling from the box according to the directions and set aside to allow to cool for 3 to 5 minutes.  Do not allow to set up and “gel”. While it is cooling, have your workstation set up and ready to whip the cream cheese mixture. Using a hand or stand mixer whip cream cheese with the lemon oil and half of the lemon zest. Add the sugar and incorporate until smooth.  Pour the cooling lemon filling into the cream cheese mixture and with a rubber spatula lightly stir the two fillings together to blend.  In a rectangular serving dish, place a layer of dried lady fingers on the bottom of the disk and brush each one with some of the fresh lemon juice.  Add about 1/3 of the lemon mixture on top of the ladyfingers and spread to cover all.  Add the rest of your lemon zest to the whipped topping in its container and mix in gently.  Then spoon on about 1/3 of the whipped topping over top of the lemon mixture which is covering the ladyfingers brushed with fresh lemon juice.  Add another layer of lemon juice brushed ladyfingers on that followed by another 1/3 of the lemon mixture and a layer of whipped topping.  Put a final layering of all three to finish out each bowl of ingredients.  Top with lemon zest or ladyfinger crumbs.  Cover with plastic wrap and refrigerate for several hours to let the ladyfingers soften.  This can be made a day ahead to really infuse the flavors.</image:caption>

      <image:caption>7 cups of peeled, seeded, and chopped fresh tomatoes (about 4 to 5 pounds) 3 tablespoons extra virgin olive oil 2 cups chopped sweet onions 1 cup chopped shallots 1 cup shredded carrots 1 teaspoon sugar ½ cup light cream or half and half ½ cup chopped fresh Italian Parsley (flat leaf variety not curly) 1 rib of chopped celery 64 ounces of chicken / vegetable broth In a large soup pot, heat the oil and then add the onions, shallots and carrots until wilted and soft. To the onions and carrots add about a third of the tomatoes and sprinkle the sugar over the mixture.  Cook and stir until the mixture starts to thicken as one has cooked the moisture out of the soup base.  Sprinkle the flour on the tomato mixture and stir in well to cook the flour taste out.  Add the parsley and celery and the rest of the tomatoes and cook and stir for about ten minutes to maintain a somewhat thick base.  Add the rest of the broth, turn the heat down to medium and lid the pot and let simmer for 20 to 30 minutes.  Check occasionally to see that it is simmering and not in a rolling boil.  Add the cream at that point and stir in and let sit for ten or fifteen minutes to incorporate the flavors.  Either use an immersion blender or food processor to completely puree the contents of the pot.  Add salt and freshly cracked pepper to taste and serve immediately or let it come to room temperature and then refrigerate to serve the next day if you make it the day ahead. Should make about 2 ½ quarts.</image:caption>

      <image:caption>1 cup peeled and grated carrot 1 cup peeled and grated turnips 1 cup washed and grated parsnip 1 cup grated sweet potato (I use the white variety) 3 eggs 3 cups sifted flour 2 teaspoons baking soda 2 teaspoons baking powder 1 ¾ teaspoon salt ¾ teaspoon cinnamon ¾ teaspoon freshly ground nutmeg ½ cup sugar or honey (for a sweet variation) ¾ teaspoon vanilla extract ½ cup half and half Oil or vegetable shortening for cooking 2 pats of butter Sift together in one good sized bowl the flour, baking powder, salt, cinnamon and nutmeg.  In a separate bowl mix the wet ingredients to include the 3 eggs, the vanilla and milk and whisk together.  If you want a sweeter fritter, add the sugar or honey after the eggs and before the milk and vanilla. If you are going with savory, skip the addition of the honey. Gradually add the dry ingredients to the wet whisked ones and finally add in the grated vegetables and stir together.  I would suggest a good sized iron skillet for cooking, but use what you have.  Place the skillet on high heat and when the pan is hot add some oil and butter to the hot pan and stir until the butter has melted.  This combination of fats will usually help not burn your fritter as they cook.  With a serving spoon, drop the batter into the hot fat and shape the fritter into a small pancake shape.  Cook until the bottom starts to brown and the edges look crispy and then carefully flip them over to cook the other side.  They need to cook long enough to make the root vegetables soft so I would say 8 to 10 minutes should do it for both sides.  You can serve them as is with salt and pepper or drizzle them with Maple syrup if you have gone with the sweeter versions. This should easily make between 12 and 15 fritters.</image:caption>

      <image:caption>6 cups of drained and rinsed no salt added garbanzo beans 1 cup of dry pearled Farro 7 cups of homemade or canned vegetable or chicken broth Tablespoons olive oil 2 medium sized red onions diced (for the color) – you can use white or yellow onions 2 fresh unpeeled carrots washed and then diced 3 ribs of chopped celery using the greens from the top if available 2 cans (14.5 ounce each) unsalted diced or chopped tomatoes 2 sprigs fresh rosemary of a ½ teaspoon dry rosemary 1 teaspoon of Pink sea salt ½ teaspoon freshly ground black pepper 4 cups of chopped baby spinach, fresh kale or chopped rainbow swiss chard 1 cup of freshly grated Smoked Gouda cheese or Parmigiano- Reggiano if you want to keep the Mediterranean integrity! Combine 1 ½ cups of the chickpeas and 1 cup of the broth in a food processor to form a smooth puree and set aside. Heat the olive oil over medium heat in a good sized soup pot. When the oil begins to shine in the heated pan add the diced carrots, onions and celery and cook until they become softened which will take 8 to 10 minutes.  Stir often so as not to let them brown. Add to that the rest of the chickpeas, the broth, the tomatoes and their juices, the rosemary, salt and pepper and stir to incorporate over now medium high heat to bring to a boil.  At the boiling point, lower the heat to medium low and cover and cook for 20 to 25 minutes.  After simmering for the 20 to 25 minutes, add the farro to the pot, stir carefully and bring it to a boil again over medium high heat. At the boil, turn the heat down to medium low again, cover the pot and stir occasionally for another 25 minutes or so until the farro is tender or al dente. If you used fresh rosemary, now is the time to remove it from the pot.  If you are adding chicken from the grill, cut the skinless, boned grilled meat into small bite sized pieces and stir into the mixture at this point.  Now stir in the reserved chickpea puree and let sit for 5 minutes covered. When ready to serve add and stir in the chopped green of your choice and give it a minute to wilt some and then ladle into heated large, rimmed bowls and sprinkle with the cheese and serve.  This makes an impressive entrée service!    Served with a toasty baguette, your entrée stew is ready for accolades from your guests.</image:caption>

Brandy and /or rum are optional. 2 packages – 8 ounces each- softened cream cheese ¾  cup granulated sugar 1 ½  pints-24 ounces- heavy cream 2 teaspoon vanilla or lemon juice 20 to 24 ounces, or so, of Lemon Curd or a 15 ounce can of cherry, blueberry, or apple pie filling. Begin by brushing the lady fingers with the lemon water or liquor of your choice. Stand half of them up as soldiers around the edge of the springform pan and fit a layer into the bottom of the pan.    Beat the cream cheese with the sugar until creamy and fluffy and set aside.  In a separate bowl whip the cream and the vanilla until stiff peaks form. Gently, but thoroughly, combine the whipped cream into the cream cheese / sugar mixture until nicely blended. Spread a layer of the creamy mixture over the ladyfingers on the bottom and then spread half of the lemon curd (apple, cherry or blueberry) over that.  Top the cream and curd layers with another layer of the dampened ladyfingers.  Spread the remaining cream mixture over the second layer of ladyfingers and top with the remaining lemon curd. Cover with plastic wrap and chill several hours or overnight. Remove the springform side of the pan and I would leave the bottom of the dessert on the bottom of the springform pan.  Zest the lemon used for the lemon water over the chilled dessert before serving.  Served with a steamy cup of hot coffee would be the end of a great fall treat for another good end to Chester County Day!</image:caption>
